Chinese Vegetable Chow Mein
A low calorie Chinese stir-fry meal made with fresh vegies and egg noodles.
Ingredients
Directions
- Slice mushrooms. Peel and slice carrots. De-seed and slice capsicums. Break up broccoli into florets.
- Heat the oil in a wok or large fry pan. Add the vegetables and cook for 3 minutes.
- Pour in the soy sauce, vinegar and oyster sauce. Add the cooked egg noodles to the pan and heat through.
- Serve immediately with lime squeezed on top (if preferred).
- Note: can use any colour capsicum. Can use oyster mushrooms instead of brown.
