Vegetable Chilli Con-Carne
A delightful twist on an old family favourite. Replaced mince with colourful, juicy vegies. Very tasty & filling
Ingredients
Directions
- Put olive oil, diced red onions, capsicums, zucchinis, eggplant and cajun spice in a large fry pan or wok.
- Cook over a medium heat for 10 minutes. Add tomatoes in juice and kidney beans. Stir and simmer for 20 minutes.
- Stir through the spinach and serve with slices of toasted bread.
