All my meals these days are equal or more by weight veg to meat. 200g chicken min 200g veg.

Hey! Lol. I do have veggies. Didn’t you see the few pieces of broccoli there? 😉 I ran late making hair bows and things for the Halloween parties in the morning so missed the window to make another side dish. The chicken was in one crockpot and the rice in another until I realized all the online recipes LIED to me so I had to make it in the oven the last hour lol. 3 hours on low my butt. 2 hours on high and was still a soupy mess. I managed to eat the shredded chicken and the other half I had set over to the side. I had a few bites left but ate them anyway because I didn’t want to weigh and take out of my log. Oldest doesn’t feel well and using that as an excuse to me a total disrespectful brat tonight. Youngest was cranky. Middle was emotional. She’s sensitive and when she saw that we were out of peanut butter she had a meltdown. Easier to just eat the rest since I’m still in a deficit for today and it would’ve been like 20 calories lol.

The chicken was done in 7 hours on low. The rice didn’t cook at all in two hours. Thankfully I had them in separate crockpots. Hubby uses the instapot but I haven’t tried it. I want to throw something in, season it and leave it until it’s time to take it out. I don’t want to brown in the thing then pressurize then cook then depressurize then take out and serve. Too many steps for fast and efficient. Easier to throw it in early, go about my day then take out and serve 😉. It’s nice for when something doesn’t cook and we need to stick in for half an hour though.

Peeper, nice dinner. So, you mentioned your husband uses an instanpot. I have heard good things about them, but I don't want more stuff in my kitchen. I am like you, sticking with my crock pot. I hope I am not opening a can of worms here, but just wondering if your husband ever cooks for the family? Making bows! I remember those days, all the activities for the kiddos. You do stay very busy! Please remember to take some time for yourself. My mother used to laugh and say, "Most people gain weight during the holidays, but you always lose weight, because you're so busy". What I am really trying to preach here, is don't neglect yourself while doing the extra stuff for others. ❤

Becca- my counselor insists on this very thing. I’ve started a once a month massage and before that I plan to get things done. Like go window shopping to make my Christmas list or buy for the kids (yes that IS fun for me lol). Hubby cooks. He used to cook 3 nights and I would cook 3 nights, eat out one night, left overs one lunch and the other weekend lunch was sandwiches or something easy. Now he cooks on the weekends. He doesn’t really support my diet and likes high carb, high fat meals that are impossible to weigh and log. So I’ve asked that he tell me ahead and I’ll make tuna or the like for myself. Here lately he’s been busy so I’ve been taking over 3 of his 4 meals. In the summer he likes smoking and grilling so he will do the meat on the weekends and I do the sides.

Chris hun, I throw a few ingredients in the crockpot, add seasonings then forget about it until dinner time. Then I take it out and feed everyone. It’s maybe half an hour on my part 😉. Some recipes take longer of course. But with the crockpot I can go shopping and if I’m an hour late it’s no big deal.
