Awesome on beluga lentil arrival!!
I usually just wing GJ; depends on what I want to have with them. I've seen them in salads too but haven't used them that way myself. Maybe pan-seared fish or chicken tenders over them?
Prep is like that for green/brown lentils only cook time is longer. Maybe some render bacon or ham too.

I’m interested to discover the taste/ texture difference between belugas and the creamier reds and nuttier brown lentils. We have flounder & kale on menu tomorrow. It’s a 4 lb bag so lots of material to experiment with. Thanks, SK! ❣️
