Thx Kellagh 😊 The temp probe in the new double-oven makes it easy to cook roasts to the target temperature. This was cooked in a 215F oven till it reached 129F ... About 45-50 min cook time; rest 15-20m and then flash sear in a smokin' hot pan for 30-40 an edge. 😋😋

Sounds well thought out. I love it. :D I live by my probe thermometer!!! I can't believe I went most of my life without one. I haven't tried reverse searing but you've convinced me.
