Oh it was :). Next time I’ll have to use half the filling though. I’m so stuffed I had to give the last 4-5 bites to the kids and I didn’t eat that burnt top portion of the toast. Unfortunately my toaster oven burns toast about every 3rd time. Just the two pieces at the back :/.

I’m not able to tell what’s inside? And is the outside like an omelette? I’m really tired so maybe I’m just not seeing it right.

Ham, cheese, onions, bell peppers and no omelet is complete without broccoli:). It’s a 3 egg omelet cooked in my cast iron skillet. Can’t flip it so have to make it very thin and carefully use two spatulas to turn it over when almost done then fill, roll and plate :). I wanted more ham but I went overboard on the broccoli :/. It’s a family favorite because everyone can choose their own filling and I have pans that I can do 2,3,4 or 5 egg omelets. Can’t hardly turn the 4&5 egg ones over without splitting them though. One for me and each of my three kids then 2 for hubby. Took an hour but so worth it!

Wright- the onions look like rice bacuse I chopped them up really fine. I dislike onions so if they are smaller I can’t be tempted to pick them out lol. Trying to eat more foods/veggies I don’t care for.

Me too about certain veggies and other items....I get it, but somethings are an acquired taste.... that's a great excuse though, place the onions in everyone else's food except yours---this way you can go in another room to relax as you use the excuse they all stink... (haha), I suppose its a good excuse for the wife to keep her hubby at bay on those hmmm special occasions as well :} Hope ya know I'm teasing of course.....

Onions taste much better if you sauté them on low heat in butter or oil until soft, even better if you cook longer until they turn golden. My Mom used to put raw onions into everything and I never liked them.

@wright I have plenty of excuses if I need them ;). Onions won’t work as hubby loves onions and garlic. I figure things like onions are good for me so I’d better learn to hide them in some food. I just accidentally dumped in too much :/.

@gz I am trying not to cook with as much oil and butter. I do love just about anything cooked in salted butter though! Hubby likes carmelized onions with minced garlic so I make it for him for burgers and stuff occasionally. One kid likes it as well. I sneak raw and cooked onions into food for the other two and I. Fajitas are a favorite but one kid picks out the peppers, another picks out peppers and onions :/.

@momma it’s easier to fold them like a quesadilla but the filling falls out since I don’t add as much cheese as I used to. This way most of the filling stays inside :). I’ve also put the veggies in before the egg is fully cooked but I usually end up breaking them. Kids also like it as scrambled eggs with everything in it but it’s harder to hide things and they pick a lot of stuff out :/.
