This is me... "eating healthy": 2lbs of salad, huge bowl of ice cream, a few Brownie Chips Ahoy cookies (so good!), and a glass of whole milk - STICKY CALORIES!

Whole milk/ sticky calories. I think that was the part that was confusing me. I 'think' I understand that you want to increase your weight and want it to be 'muscle not fat' - is that it? But with the repeated lamenting when your weight drops I get confused when you seem to eat light dressing (I think I've seen that) and 1% milk.

Yeah, fats turn to fat in the body, carbs and protein won't. The more fat in a surplus, the more of the gains will be fat. Lift heavy and kick the protein and carbs up and a higher percentage of the gain will be muscle if done with a moderate surplus.
