Almost finished with the Easter leftovers! There’s one slice of Pecan Pie and one slice of Caramel Cake left, but I’ve promised them both to my husband. Still have about 10 little country ham rolls and a couple cups of Macaroni & Cheese. My husband doesn’t care for the ooey-gooey Mac n Chz so I’ll be finishing that up at over 200 calories in 1/2 cup.

Was out of fruit so yesterday I got 2 cantaloupes and some blueberries.

The scale has gone up every day since 4/6, I think.

I want to start giving plasma again soon, so I need to get my fat consumption down significantly. I LOVE BUTTER! That’s my downfall. All the vegetables I make have either butter, salt pork fat back or country ham in them. That’s what I get for learning to cook “Southern Style” since I moved to Virginia 40 years ago.

You've worked so hard and practised good eating habits for months now. I'm hoping you continue to use what you've learned to keep from ever gaining that weight back. I'm pulling for you Debbie.

Thank you, Shirley. I can always count on you for encouragement. I think this just a temporary thing. I don’t feel like it will be months of splurging, as I have done in the past. I really think I will be back on track by next week. Thank you for caring.

My mother was from the South, so I know that type of cooking! And I do so love mac and cheese. 😋 There's a reason I only rarely make it. I like to eat too much, so I have to stick with veg instead of butter. Nevertheless, I have been impressed with your ability to moderate. Easter is a special occasion. You seem to recognize that special occasions shouldn't occur every day. Great refocus! You're doing a great job!
