Got a new Instant Pot yesterday. Ordered a cook book that will arrive in a couple days. Looking forward to making some great things in it! Anybody have a favorite easy recipe they want to share?

Besides my air fryer, my instant pot is the best appliance in my kitchen. The yogurt function is my favorite.

Not an easy recipe but so worth it Tuscan chicken pasta Ingredients 1 pound boneless skinless chicken breasts (about 2 breasts) 1 Tablespoon olive oil 2 teaspoons paprika , smoked or regular salt and freshly ground black pepper 2 Tablespoons butter 1 cup yellow onion , chopped 1 teaspoon dried basil 1 teaspoon garlic powder (fresh garlic) 1 teaspoon Italian seasoning (mixed herbs) 4 1/4 cups low-sodium chicken broth 1 cup milk 12 (340 g) ounces penne pasta (or farfalle) 6 (170 g) ounces cream cheese , softened and cut into small pieces 1 1/2 cups freshly grated parmesan cheese 8 (226g) ounces sun-dried tomatoes , drained and chopped (sauce) 4 (113g) ounces baby spinach leaves (use all) salt and freshly ground black pepper Instructions • Turn Instant pot to sauté. • Season chicken breasts on both sides with paprika, salt and pepper. • Add 1 tablespoon olive oil to the hot instant pot. • Add chicken breasts and cook for 2 minutes on each side, until browned, but not cooked through. Remove to a plate. • Add butter and onion to the pot and sauté for 2 minutes. • Add chicken broth, (scraping the bottom of the pot to deglaze it), seasonings, milk, pasta, and chicken breasts back to pot. • Close IP lid and turn release valve to sealed. Cook on manual (high pressure) for 6 minutes. • When the timer beeps, do a controlled quick release, to release the pressure. (Turn the valve but if any liquid sprays close it again and try again in a few seconds.) • Carefully open lid. Remove chicken to a plate and tent with foil. (Don’t skip this step. The chicken will continue to cook under the foil). • Stir in cream cheese, stirring gently until it’s melted and the sauce is smooth. • Stir in parmesan cheese, sun dried tomatoes and spinach. Season with salt and pepper, to taste. • Chop chicken and return to pot. Sauce will thicken as it cools. Serve warm, garnished with extra parmesan cheese, if desired.

Spaghetti bolognaise Ingredients 1 Pound Lean Ground Beef 1/2 Teaspoon EACH Salt, Garlic Powder, Onion Powder, Italian Seasoning 1 Pound Spaghetti Noodles 1 (24 Ounce) Jar Spaghetti Sauce 36 Ounces Water, 1 1/2 Jars 1 (14.5 Ounce) Can Diced Tomatoes Instructions • Set the Instant Pot to sauté' and add the ground beef. Add the salt, garlic powder, onion powder, and Italian seasonings. Cook the meat and seasonings, breaking the meat up until it's completely browned. Turn the Instant Pot off. Drain any excess grease from meat if necessary. • Break the spaghetti in half and place on top of meat in the Instant Pot. Pour over the spaghetti sauce, diced tomato, and water. Push the spaghetti down with a spoon if necessary to make sure it is completely covered in liquid. • Seal the instant pot and set it to manual mode, high pressure, 8 minutes cooking time. When the time is up, use manual quick release to open the Instant Pot. Stir the spaghetti well. Serve immediately. Notes This spaghetti may appear to be a little liquid right after cooking. Be sure to stir well to incorporate all of the liquid into the noodles before serving. Some people have had an issue with their noodles "clumping" together. Try crisscrossing the noodles when you add them to the instant pot, instead of adding them in one big chunk. Some clumping is normal, simply use a fork to pull any noodles apart that have stuck together.

You can find many great, well-tested recipes at www.pressurecookrecipes.com. They worked directly with the Instant Pot company and their recipes are very reliable.

Thanks, everyone. I've checked out the websites. Lots to absorb. I also went ahead and ordered a cook book with 800 InstantPot recipes in it! Guess I'LL be the one sharing recipes before too long!

Yes Debbie I will be waiting to see what you come up with. I have a pot and it is just sitting in there. Have not fixed anything in it. So I really don't know where to start lol.

I mostly use mine to cook perfect brown rice, to cook beans (I buy mine dry - more economical, fewer preservatives, etc), to quick stream veggies, and to make yogurt. =) The yogurt is my latest discovery/obsession, I've never had such amazing yogurt before in my life. The recipes are all online, and I have a chart of weights and cook times for my staples on the side of my fridge. I looooove my instant pot!
