Debbie Cousins's Journal, 02 Feb 21

Down another pound this morning, hallelujah. I allowed myself 29g Net Carbs yesterday just to push the boundary and see how much I could consume without knocking out of ketosis. I was still in optimal ketosis this morning, even though I skipped my last cup of tea (with heavy whipping cream) which would have put my fats at 70%. Ended the day with 69% Fats, 20% Protein and 11% Net Carbs. That's the highest I had gone on the carbs, but it is nice to know that I CAN add in those extra cashews if I want!

Going back to Low Calorie today. Just had my oatmeal with raisins & Pecans for breakfast. NICE bathroom visit after that, PTL. I was fortunate to have some productive bathroom visits yesterday, which I am sure accounts for the good loss this morning. One thing I had forgotten about keto was how hard it is to get in the right amount of Fiber while doing it. Now, I get to enjoy a week of regularity!

I'm going to start with trying to keep my calories under 1,600 and see if I am able to lose on that amount. If not, I'll cut back down to 1,400, and if I stall on that, I'll go back to Keto after a week. As long as I can still lose weight doing Low Calorie, I will.

Cooked the hamburger and sausage yesterday for my Instant Pot chili that I am going to make today. Waiting for my son to bring back my cumin that he borrowed right after I made the chili a couple weeks ago! Also going to try adding mushrooms to it, just because I have some that need to be used. Hope the juice from them won't make the chili too watery, because the one I made last time was nice and thick, so I could get by with only adding 5 saltine crackers to it. Maybe if it is thin, I will thicken it some with some cornstarch slurry.

That is good to know that you are fine eating up to 30 net carbs and still be in ketosis. I could get a lot of fiber and veggies in on that allottment myself but I have been doing this for so long and I can eat a lot of greens. LOL Great news about the loss and I hope you have a great day. Maybe add less water to the chili if you worry or precook the mushrooms in a pan before adding them-

@liv001, I didn't read your message until after I made the chili. With the instant pot, you have to have at least a cup of water or broth in the bottom of the pot, or you'll get a Burn Notice. BUT, the idea about cooking the mushrooms separately was a good one! The chili was a little thinner than I prefer, but when I scoop mine out, I'll just put less "juice" in it so that I'm not tempted to overload with crackers. In times past, I would eat half a sleeve of crackers in a bowl of chili! At 12 calories each, I don't want to go overboard.

Good for you and chili sounds good. I need to break out my instant pot too. what's your favorite IP recipe?

I eat a ton of spinach, broccoli and avocado on keto to get my fiber. But I agree, keto makes it hard to get your fiber (natural fiber). I’ve used the Benefiber drink packets with some success, but never a huge fan of artificial fibers or vitamins.

I do a couple of spoonfulls of chia seed pudding almost everyday. I think I eat more fiber than most people no matter what diet they say they are on LOL

I like to add some inulin powder. It increases my fiber and feeds my gut probiotics. If you are trying to up your fiber and need a thickener instead of cornstarch you might try using glucomannon powder--which is also a good prebiotic for gut health. Like Liv001 says too, Chia is a great way to add good (prebiotic) fiber.

Debbie You have been doing so well on Keto. I find that eating Keto there is less bulk and many don't have daily BMs. If I am having difficulty, I take a magnesium supplement (Calm) that helps keep moisture in colon.

@aintgotaname - I've only had the Instant Pot for a couple of weeks, but so far my favorite recipe has been for Chicken Marsala. @ruthe1213 and @DLynneGarner, thanks for the advice on fiber. When I go back on Keto, I'll have to start eating my High-Fiber One-Minute Flax muffins and avocados again!

@Debbie Cousins, you can always keep your IP on the "keep warm" function and leave the lid off, that way the moisture slowly evaporates but you don't risk burning. If you're in a hurry you can try the saute function and it will boil off liquid quick, but I've burned stuff before using that so be careful.
