Debbie Cousins's Journal, 12 Feb 21

Chugging along. Having Filet Mignon for dinner tonight for my husband's birthday. Just by itself with "extra love" (butter, to dip each bite in!) He's having baked potato with his. That's alright. I'll have him give me 1/2 of a bite of his potato (before he defiles it with a bunch of pepper!) My big goal for today is to clean his shower and then TAKE a shower in it. When the weather is this cold (28 degrees F), the water in MY shower just gets warm, not really hot. Desperate times call for desperate measures! Looks like I never recorded my weight yesterday. I didn't really lose anything THIS morning, surprisingly. More of a loss to look forward to tomorrow. Been ordering things on Amazon instead of going out. I was surprised that I could get my Hormel Black Label Fully Cooked Bacon on there, with next day delivery. BJ's is hit-or-miss on being able to get it. SO much easier than regular bacon. Only have to cook two pieces for 45 seconds to make them nice and crispy. With regular bacon it's over 2 minutes and it makes much more mess with more grease. Another long day ahead. One hour down - 11 to go.

Debbie, have you tried adult coloring? It keeps me entertained for hours. I also read, sew, do counted cross stitch, crossword puzzles, watch movies. Perhaps you could find some hobbies that you would enjoy.

It makes me feel sad you're counting the hours til bedtime. I know how easy it is this time of year to feel depressed & unhappy. Like Shir said, try to find some things to while away your time that make you feel better. Some more suggestions....Hang a bird feeder somewhere you can see from an inside window & watch all the beautiful birds. Put out peanuts in the shell & watch the birds & squirrels come first them. Find shows on Netflix or Amazon & binge watch!! Read. Call a friend you haven't connected with in awhile. Life us short....don't wish the hours away ❤

Oh, but you miss out on all those wonderful, and healthy, bacon drippings. I always use all the drippings and they never go to waste. Have you ever tried baking the bacon? My grandson loves it baked. I prefer it rendered so I get the drippings, but baking it actually produces very little drippings, so the fat stays in the bacon--which is also a good thing, I think, but I love having the drippings separate from the bacon so I can use it for other things. I LOVE eggs fried in drippings. In fact I love lots of things fried in bacon drippings. I often mix the drippings with olive oil too; best of both worlds. Congrats on the loss! Feels good, right?

Can confirm all DLynneGarner has said! I will only eat baked bacon - I'm not big on pork, but the crispness of baked bacon is too hard to resist. But my dad always collects the bacon drippings from our family brunches (he cooks for 5, including two gym rat men - they eat enough for 3 normal people, a piece 😂) and uses them throughout the week for anything that touches a pan. Eggs are a big one (see again: 2 gym rat men...), but also stir fry veg; he adds it to broths when he's making anything from soup, stews, to the water he uses to boil rice or quinoa... It definitely earns its place in his fridge. =)

Hi Debbie

Those bacon drippings are much loved at my house too. I use them for anything and everything. The bacon tastes better to me when fried or baked rather than the precooked. But please enjoy whatever you like. Years ago I purchased the precooked to take camping, but it just didn't seem quite the same. Too bad that so many of the better things take more time and effort, and then require more clean up. The precooked is sure cleaner. So glad you are back on track with eating. I too am struggling with not doing all the things I should be doing.

Baked for me also. I don’t care for bacon sitting in a sea of fat that will cling to the inside of my arteries then harden into a crayon hard substance that the cardiologist has to go after with a roto rooter.
