Debbie Cousins's Journal, 06 Dec 22

Down over another half pound this morning. That was a blessing. Knees, not so much! They have been doing better the past two weeks, but today I'm struggling with them. I usually walk 1/2 mile at a stint 3x/day for a total of 1-1/2 miles. I've been doing that every day for the past month. Today, I've gotten in 1.2 miles so far, but it has been a real struggle to get that much in - only walking about 2/10 of a mile at a time and then I'm pooped. I know I will complete the mile and a half, just because I want to achieve Day #31 without faltering. Time for another application of Diclofenac, I guess. Thankfully, I haven't had to take a pain pill for a couple of weeks, though. I think I will make it through today, also, with taking it slower.

I had just been recording my food, journal entries and weight on the app for the past several days, so I just read all the kind comments from my last couple of Journal posts. I hate that you can't do that on the app. Oh well, thankfully, I have a laptop that I can use any time I want to, and get caught up on comments. Thank you to everyone who has been supporting me all these years, and to all the new people who have been encouraging me lately, as well.

I've got a lot of cooking and baking to do in the next couple of weeks. Church Christmas party on the 17th (making See's fudge, Pimiento Cheese Spread and Five-Cup salad. I'm also toying with the idea of making a Franklin Nut Cake, but that sucker is over 600 calories a slice! I plan to give 1/4 of it to my husband's uncle. If I take it to the Christmas party, probably the other 3/4 would be eaten or taken home by folks.

For Christmas with the family (12 people), my part is to make Peppermint Bark (done), See's Fudge, Chips and Ranch Dressing, Spinach Dip, Chicken Rolls, and to do the peeling and dicing of potatoes, onions and celery for my MIL to make Potato Salad, and learning how to make the Christmas Wreath pastry. I need to get started, so everything won't land on me all at once. Just don't feel like doing any additional standing today. I've got to take my grand daughter home from school at 3, so that doesn't give me any time to make anything anyway.

I just got all the dishes caught up (except for the silverware - I'll do them when I finish writing here), so the kitchen will be ready for baking tomorrow. I have to start with a totally clean kitchen! OK. I'll do the silverware and then the other 3/10 of a mile of walking now. Gulp. Sometimes, it's not easy to do what needs to be done, but PTL He has helped me to do well on being consistent lately (for the past 23 weeks - almost half a year!!!)

Only took me 15 minutes to do the silverware, the Instant Pot, and walk my 3/10 of a mile. See, I knew I could do it!

The rainy, damp weather probably don’t help. The wreath pastry sounds pretty. Always a lot to do for the holidays but worth it!:)

Debbie, because I can't stand for long, I use a tall stool in the kitchen. I have a very light one that folds flat when I'm not using it. That might help you with all the holiday cooking. Sounds like a busy month, but very festive!
