Debbie Cousins's Journal, 13 Feb 23

Well, after almost three years of dodging the bullet of Covid, my husband and I both tested positive this morning! Here is what that has to do with food: whenever I was sick as a kid, my Mom would always go out and buy me an Almond Joy, a pouch of sunflower seeds and a bag of crispy Cheetos. I associate illness with "treat foods." and that makes me want to jump into that Pecan Pie on the counter (you know - the one I swore off yesterday and said I'm not going to have any more of). So far today (11:25am), I haven't eaten anything I'm "not supposed to" eat.

My husband is pretty sick (headache, sinus problems, coughing, sneezing, and feels drained). I wouldn't have even tested myself if it had not been that he tested positive. All I had this morning was a bit of burning at the back of my nose/throat. Since I was feeling ok, I rushed around and did all the dishes, cooked a roast, sautéed onions and mushrooms to go with it, and cooked a pot of butter beans. Then I did all the cooking dishes. I'm starting to get a bit of a headache, and my throat is hurting worse, and I've been coughing a little. Thankfully, it's not a LOT of coughing, as my weak bladder doesn't do well with coughing at all!

After gaining a pound in this morning's weigh-in, and setting an unwanted record of my highest ever Average Daily Calories of 1,999, I've decided that this week has to be a very strict one. My goal is to stay below 1,400 calories a day, which will set a new LOW record. I'm praying that having Covid won't weaken my resolve to stay on target, even though it gives me a "good excuse" not to. God was good to give me the resolve to put five pieces of 622-calorie Lasagna into the freezer yesterday, instead of eating them this week.

Lunches today through Wednesday will be 5 oz. of Pot Roast (including gravy), 1/3 cup of Mashed Potatoes, 1/4 cup sautéed onions, 1/4 cup sautéed mushrooms, and 50g of fresh-cooked green beans (total 364 calories). From Thursday through Sunday, it will be Chinese Casserole, which is a complete meal in itself (356 calories). Breakfasts are Dave's Killer Good Seed bread with 23g Butter (284 calories). Dinners are 225g of Butter Beans (310 calories). Snacks/Desserts are fresh fruit (cherries, pineapple & cantaloupe this week) and a couple "breaks" of KitKat bar (52 calories each) - trying to limit it to 1/2 of a bar a day. If I stick closely to that plan, I will have less than 1,300 calories a day and will easily make my goal (and probably lose a couple of pounds).

I'm venturing into uncharted territory here! Wish me luck (or prayers)!

Hi there, I got a request from you today in my email to follow me. It's fine with me if you want to, but I'm not always faithful to this site. Perhaps, if I have a follower I'll be more incline to report.
