I am down 2 lbs. and this is great because my mini goal is to drop 2 lbs a week and to drop 10 lbs by the end of January. I also started shopping a local organic market that sells produce from local growers. Just knowing that I am helping local farmers stay in business and my money is working to help someone other than big business.

One of the veggie recipes that I use in a slow cooker is very simple carrots & parsnips with a little chicken broth. Cook on high for 2 hours and it's done. It cooks while I take a walk or ride my stationary bike. (Recently cooked this and brought to a friends house for dinner and she liked it so much we are cooking a big batch for her to take to her Hindu temple substituting chicken broth for vegetable broth.)
