Two banana oatmeal “cupcakes” with a spoonful of Greek yogurt. Cooked in air fryer.

One smooshed small banana, a 1/2 tablespoon of rolled oats, teaspoon almond flour, a heaping teaspoon of dark cocoa powder, stevia, pinch of salt and pinch of baking powder. Not bad, a little undercooked at 12 minutes, but the taste is good. Thinking egg whites would cause a better rise than the baking powder alone. I overestimated the calories, probably around 150 for both muffins.

I need to buy a round silicon muffin pan to fit the instant pot. or maybe just some silicon muffin forms. will look around unless anyone has one they love.
