DJ, I just use a regular old kitchen knife. There is nothing fancy. I do soak the potato in cold water for a few minutes.

It took me awhile to figure out how to get the crunch that I like. I soak them for a few minutes and then I put them in on defrost without any oil for five minutes until they’re dry. Then I must them with three seconds of olive oil, repeat when I turn them over. And if I cook big wedges instead, I prebake the potato.
