It is Cauliflower Cheese, with a baked mushroom, with Parmesan, fresh homemade pesto (easy as!), cottage cheese and fresh chilli (I love chilli!!).. Served on a bed of baby spinach and broccoli on the side. It was so yummy! 💪❤️

Thanks! I'll give it a go... I'll need to make a few modifications because I'm allergic to cow's milk, but I reckon I could do something like this. Thank you!

Oh no problem Jeannie.. I actually made my Cauli cheese with soy milk (I hate cows milk).. However I did use normal cheese for the cheese part.. But you could use vegan cheese for sure! Lots of salt and pepper 😋

Haha, I hate soy! But thankfully I'm okay with goat's milk, so I can use that. I might give it a go on the weekend
