Hello everyone. Hope you had a happy Saturday. I spent this cold and rainy Saturday in the kitchen prepping some food for next week. I made some egg salad and divided it into 1/2 cup portions and put it in sandwich bags so I could take it to work or have as a quick meal if temptations hit. I made a Keto Pumpkin Cheesecake that will keep in the fridge for several days and will fill my need for a sweet treat. So good with a cup of coffee. I also made keto friendly chocolate nut bars--dark chocolate, almond butter and walnuts, almonds and cashews. These are one of my favs and often take one to work for my coffee breaks. Yesterday I spent my day cooking pork spareribs with a homemade dry rub along with coleslaw and fried okra. I also had baked sweet potatoes grown in the garden. It turned out awesome!

My calorie intake has dropped and my macros are looking better for the keto, but I still have some work to do to keep myself in line. I will need to push myself to get my workouts in, as well. The forecast is for lows in the 20s, so the garage is gonna be cold! I'll be ok once I get started, it's just the getting started that is hard! I was sore for a couple of days after my last workout. That's the price you pay when you take a couple of months off from your workouts! Ouch! I hope to get a sweet reward in the morning with some good numbers on the scale.
