A little more festive looking today. Still pretty much the same mix except I used the liquid from the artichoke hearts as the oil in my vinegar and oil dressing. I swear, if artichoke hearts weren't so expensive, I'd eat the whole jar every day. So delicious. Spinach, avocado, pork tenderloin, tomato (the yellow ones are from my plants) and mini bell peppers along with artichoke and feta.
