Angeled Eggs

A mayonnaise free version of deviled eggs.

Ingredients

Directions

  1. Remove the eggs from the shells and then bisect lengthwise.
  2. Carefully remove and save the yolks.
  3. Blend all other ingredients with the yolks until smooth.
  4. Spoon equal portions of the mixture into the egg white halves.

Great tasting filling for deviled eggs. I did make some substitutions, lemon juice for vinegar and added garlic tabasco sauce (about 1/2 T.). Also the filling was to dry so also added 1 T. full fat sour cream. This is a great recipe for all phases of Atkins.

This sounds so good. I wouldn't have thought to use Avocado. Its a new trend that avocado is also good for female reproduction, and the fats/oils in them are very good for you!!! Can't wait to try it!

That's a neat idea. I never would have thought of using avocado and vinegar. Usually what I do is use plain yogurt in place of mayo and reduce the number of yolks (I think you really only need two or so even if you are starting out with a dozen whole eggs).

This sounds interesting....I do love deviled eggs...although not good on cholestrol....I ususally go for egg substitutes these days...but no receipt for deviled eggs with a substitute as far as I know..

This is great! My recommendation: add a tablespoon of onion to the recipe!! It tastes GREAT!
