Eggplant Dhal
Red lentils with eggplant and Indian spices.
Ingredients
Directions
- Sauté diced ginger and garlic in oil. When soft, add spices and fry for 30 seconds.
- Add chopped tomato and eggplant. Stir well, coating all eggplant cubes.
- Add lentils and water. Stir well.
- Simmer on low heat until lentils are soft. Most of the water should be absorbed. Add salt to taste.
- Can serve with yogurt, lemon juice and cilantro.

This is very tasty and pretty filling. I added some Thai peppers from my garden and it will really clear your sinuses on a cool fall day :) I love how low in calories and high in protein this dish is.
