Hubbys packed lunch:
Grapes and dates
Chia seeds soaked in soy milk with cocoa
Home made oil free hummus and home made cashew (not)cheese
Carrots and zucchini sticks to dip
Home made besan flour oil free wraps (ground chickpea+flaxmeal+psyllium husk+water)I'm proud of these as I usually fail at making wraps. The backyard chickens love it when i fail though!
filled with cajun spiced sweet potato, vegetables, herbs and spudcheese.
I find a packed lunch the most challenging on an oil and gluten free vegan diet. Would love to see some ideas from others.

Happy with that, especially as I am a day away from TTOM.
hubbys weight: 87.5 (loss of 0.2)
Hes doing awesome. I am still amazed at how easily he dived into this vegan lifestyle. Seriously when I first suggested it, he was like a brick wall of refusal and hes never like that with me. Apparently the vegetable pie we ate one lunch time at a restaurant won him over. He even prefers his sacred coffee with soy milk now. I have noticed the dark circles under his eyes are clearing up, despite the fact I know he could use more sleep. The large skin tag on his eyelid has completely disappeared. The little dotty spots on his upper arms are gone leaving nice smooth skin. Overall hes looking so much healthier and thats in only a few months of cutting things from our daily menu.
I hope everyone else is doing well and noticing every small but important change in their health too.

Losing 0.3 kg a Week

Last nights dinner. Sweet potato, cauliflower, pumpkin, chickpea curry. Scattered with basil, coriander and mint leaves, and extra chilli for me!
I followed this with hot chips splashed with vinegar (no oil used in cooking but I overdid the sauce tut tut)and a dessert of banana ice-cream. (frozen mashed up banana with cocoa powder and cashew nuts, tastes better than it looks!). I love filling myself up with nutritious food. Its such a lovely change from starving myself to lose weight. Scales this morning said I am down another 0.3kgs since my last official weigh in last Friday.
