Baked Cod

Tasty baked cod with a delicious creamy sauce.

Ingredients

Directions

  1. Preheat oven to 425 °F (210 °C).
  2. Place fish in an 11 x 7" baking dish coated with cooking spray.
  3. Combine lime juice, mayonnaise, onion powder, and pepper in a small bowl, and spread over fish.
  4. Sprinkle with breadcrumbs; drizzle with butter.
  5. Bake at 425 °F for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.
  6. Note: based on a recipe from Cooking Light.

Instead of bread crumbs, sprinkle on fresh Parmesan cheese at the end.

Made this last night and it was super easy and super good! We tried a similar recipe last week with tilapia but the taste and texture of the tilapia was really disappointing. Cod is mild and flaky and works very well with this recipe. This one will be a go to favorite!

Cooked again with the Lite Mayo and replaced the bread crumbs with Old Bay. Excellent! Whether you use bread crumbs or Old Bay, you will love this recipe.

Nice and moist but could have used a little kick. I used yogurt instead of mayo. My husband and I both liked it and I'll make it again but probably throw some other spices in.

This recipe is good. I used nonfat plain yogurt in place of the mayo, and I used a sprinkle of Herbamare in place of the onion powder. It was creamy and good.
