Pumpkin Oatmeal Cookies

Sensational oatmeal cookies with pumpkin and blueberries.

Ingredients

Directions

  1. Add all items in a medium bowl.
  2. Mix well.
  3. With a spoon, scoop out desired size balls onto non-stick sprayed cookie sheet.
  4. Bake for 15 min on 425° F (220° C).
  5. Note: you can use yogurt instead of pumpkin and add in apples and bananas, too.

I quadrupled this recipe so I could use a full can (15 oz) of pumpkin and made a lot of other modifications (based on the other reviews) that resulted in pretty tasty, moist, not too sweet cookies. Though they were more like soft energy bars than dessert. Here are the ingredients I used (method was the same): 1 can pumpkin (15 oz) 4 cups oats (I used quick-cooking, but I'm sure rolled are fine too) 1/2 c sugar (not Splenda) 2 finely chopped small apples 1/4 c raisins 1/2 c applesauce 2 egg whites 6 tsp cinnamon 1 tsp nutmeg 1 T vanilla

This isn't a great recipe for Atkins Induction Phase, so I only rated them a 1. I might try them sometime, though. I think I will substitute half the oatmeal with ground flax seed, leave out the blueberries, add more Splenda/Stevia, some vanilla and make smaller cookies. That way, I'll end up with more, each cookie will have fewer carbs and I'll feel like I'm eating a lot.

Not worth the waste of ingredients. Horrible tasting. Threw the whole batch in the trash.

Followed directions exactly as posted except I added 2 extra packages of stevia. Some ingredient must have been left out, as the cookies did not come out as pictured and stayed in the ball formation. Didn't necessarily taste bad, but if you need to get your water in for the day, they are perfect as they are so dense, they stick in your throat. Need to add more moisture to the batter, either the egg white or applesauce as other recommendations.

Try adding a 1/4 to a 1/2 cup of cinnamon applesauce and 1 tbsp of honey...

This was okay... I would make again... adding more sugar, and maybe take advice from other reviews and add vanilla...

very dry and tastless. add stuff to recipe if you are going to try this one. needs more splenda or something

These were really good! I added 3 more packets splenda and 1/2 tsp of vanilla. The blueberries were very melty and yummy and the cookie was very moist and cakey. I will try to bake these in a pan so I can cut them into smaller servings, because I ate way too many last night!
