Bacon and Cheese Stuffed Mushrooms

These delicious stuffed mushrooms are also great refrigerated or reheated.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Take the stems out of mushrooms, reserving 4 of the stems. Clean mushrooms, set aside.
  3. Chop onion and reserved stems.
  4. Fry bacon until crisp, reserving grease.
  5. Cook onion and stems in grease until tender.
  6. Crumble bacon into soft cream cheese.
  7. Scoop some of mixture into each mushroom cap.
  8. Bake for about 10-15 minutes on baking sheet, and then broil to brown the tops.

good but I think I would add some mozarella and less cream cheese next time. still good

I did a little adjustment - instead of onion and cream cheese, I used a little ground beef and shredded cheddar. I coated the outside of the mushrooms with olive oil. It didn't take long and the carbs were fewer.

The stuffing alone makes an awesome chip dip. I've been using it with the crunchy oven baked rice crackers and its sooo tasty. Bringing the mushroom version to Easter dinner.

OMG, these were so good. I'm a mushroom lover. I used non-fat cream cheese and Hormel crumbled bacon. No cooking of onion and bacon in grease. Took less time to make. VERY GOOD

Oh my goodness!!! This was a great recipe! I did also cut the cheese in half so I got more onion and bacon flavors. My kids loved it and I had to stop myself from eating them all!!!

I changed this recipe a little by using sausage instead of bacon and added a bit of mozzarella. The cream cheese seemed to be a bit heavy although I can't quite put my finger on what would've added at little "punch" to the mixture. Overall it's a pretty good recipe but I probably won't make again.
