Lemon Poppy Seed Cookies

Low carb and oven-fresh cookies.

Ingredients

Directions

  1. Preheat oven to 180 °C.
  2. Beat egg, add maple syrup, coconut oil, lemon juice and vanilla extract. In a separate bowl mix almond meal, poppy seeds and baking soda.
  3. Pour liquid mixture into dry mixture and stir well until well combined.
  4. Form the dough into ping pong sized balls and place them on the baking paper. Use a flat service to flatten the dough balls.
  5. Bake the cookies 10 to 15 minutes or until they start to brown around the edges.
