- Spray pan with olive oil and over medium high heat sauté the onion, garlic, celery and capsicum until softened but not browned. Remove from heat and allow to cool.
- In a bowl combine the chicken mince, egg, cooled vegetables, finely chopped herbs, salt and bread crumbs.
- Stuff into chicken cavity and tie legs with kitchen string. There will be a small amount over, place in a ramekin and bake for 20-30 minutes at 180 °C.
