Breakfast Muffins

Healthy and delicious.

Ingredients

Directions

  1. Grate zucchini and kumara and put into a bowl.
  2. Add chopped onion and mushroom. Season to taste and add herbs if you desire.
  3. Add egg white and mix until thoroughly combined.
  4. Divide the mixture into muffin tins and bake in the oven at 180°C fan for 20 minutes.
