Easy cabbage soup recipe that will delight you and your diet.
Ingredients
Directions
- In a large stock pot add the extra virgin olive oil on medium heat.
- Add onions, garlic and peppers, heat until onions are clearish.
- Add celery and mushrooms.
- Add carrots, soup mix (like lipton's brand), chicken stock and spices.
- Bring to a boil, turn down to simmer.
- Add cabbage pushing it down into the liquid, then add filtered water until cabbage is covered.
- Cook for one hour and let cool down before serving.

i tried this, made a large pan and froze loads :) its soooo good for the calories!!

This was great! I had 3 servings. I left out the bell pepper. They only go well with tomato sauce dishes to me. Also, I added Adobo and parsley. It was sooo good.

Could you leave out the carrots for low carb? Then what would the total carb be?

pmmcjom12- a serving is one cup. I figured that out when I put the whole pot into measured bowls.
This recipe is very tasty and easy to put together. The only thing I changed is that I used two cups of mushrooms instead of 4 cups. I'm not really a fan of mushrooms and found myself still eating around them. Next time I'll probably chop them up very fine to encourage myself to eat them.

Sounds very tasty! GReat for the low calorie part, but high in sodium with one serving being 20% of a day's sodium. Might be able to modify the recipe with substituting sodium free spices for the "onion soup mix" and using home made chicken stock, rather than canned, which is high in sodium. I think I'll give it a try.
