Lean Beef Chili with Beans

Beef chili packed with fiber and protein that's perfect for warming you up on a cold night.

Ingredients

Directions

  1. Cook hamburger meat in a large pot until no longer pink.
  2. Add onions and cook until clear. Drain and rinse. Return to pot.
  3. Add all remaining ingredients at once.
  4. Bring to a boil. Reduce heat and simmer for about 1 hour.
  5. Serve with your favorite toppings.

I made this for my family and everyone loved it. I doubled the recipe and used canned kidney beans due to lack of time. This was outstanding. Will definately make again.

It smells and tastes wonderful! However, it took nearly 3 hours to get the dry beans cooked. I think maybe I'll try canned beans next time and just rinse them really well. Also, 1 cup of water wasn't nearly enough. I probably added another 4 cups during the simmering part. Otherwise it would have been a big clump of stuff and the beans never would have cooked. There wasn't enough liquid to cook them.

I have yet to try this, though I did have a couple questions about this recipe. Does it really only take an hour to cook if you are using dried red kidney beans as one of the ingredients? Did you presoak the beans? I thought when using dried beans cooking time is about 2 hours.
