Turkey and Black Bean Chili

A sweet turkey chili with prunes or raisins.

Ingredients

Directions

  1. Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble. Drain in a colander.
  2. Heat oil in the skillet over medium heat. Add onions and garlic, and sauté 7 minutes. Add chili powder, oregano, cumin, salt, and red pepper. Cook 1 minute.
  3. Return turkey to the skillet, stir in 1 1/4 cups water (wine, stock), prunes (or raisins) and beans. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes.
  4. Serve over rice if desired.

There is something missing from this recipe. No tomato product? My finished product definitely didn't look like the picture.....it was pale and watery. Add a can of tomato soup (didn't have any paste or sauce on hand). It will be edible now, but I was disappointed.....the pic makes it look good.

This is great and low cal as well as being healthy. Use any lean meat-turkey, chicken, venison (which is what I used). Great on rice or plain. Serve with a salad.
