Tex Mex Beef Casserole

Beef and cauliflower rice casserole.

Ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. Brown ground beef in ovenproof skillet.
  3. Mix in onions and peppers and cook til soft.
  4. Stir in riced cauliflower and minced garlic.
  5. Mix in salsa, oregano, chili powder and season to taste with salt and pepper.
  6. Remove skillet from heat and stir in whisked eggs. Top with sliced tomatoes.
  7. Put skillet in oven and cook for 40-45 min.
