Southwest Chicken Soup
I made this soup using leftovers from chicken tacos, which is so yummy.
Ingredients
Directions
- Add half of the liquid (water and broth), chicken, spices, and garlic to a pot. Simmer until the chicken is cooked all the way through.
- Remove chicken from broth and shred.
- Add the remainder of the liquid, shredded chicken, salsa, corn, and beans to the pot.
- Simmer for about 20 minutes to let flavors emerge.
- Serve with cheese sprinkled on top.
