Banana Pancakes

Crowd pleasing banana pancakes are a fun twist on regular pancakes.

Ingredients

Directions

  1. Combine flour, sugar, baking soda and salt.
  2. In a separate bowl mix together egg, milk, vegetable oil, and mashed bananas.
  3. Stir flour mixture in to banana mixture; batter will be slightly lumpy.
  4. Heat a lightly oiled griddle or frying pan over medium high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook until pancakes are golden brown on both sides; serve hot.

Has anyone heard of making banana pancakes with just 2 eggs and a mashed banana? I hear they are really good and almost no carbs.

I thought this was a little too sweet. I will try them again as pausbiru did with no sugar. I always have overripe bananas so I will do these again. My husband loved them.
