Directions
- Beat eggs and water in medium bowl.
- Stir in remaining ingredients.
- Pour into 9" pie plate sprayed with non-stick cooking spray.
- Bake for 30 minutes at 350° F (175° C) or until top is golden brown.

This was great, but I do not like mushrooms so I replaced them with grape tomatoes.

Easy to make, filling. I would leave out the mushrooms next time, not a big fan. Will make this with veges next time too. Used 4 eggs and liquid egg whites.

I dont often get compliments for my cooking, cos i'm not very good at it.But my husband came to me and said "That was LOVELY, you can make that again!!!!". He even took a piece of it in his lunchbox the next day...

Pretty good (I omitted the mushrooms). Could be spruced up a little with some low carb salsa, sour cream and even avocado.
