Breakfast muffins made from fried white mushrooms, grilled chicken and spring onions.
Ingredients
Directions
- Cut the mushrooms and fry them until golden. Chop spring onions and chicken.
- Whisk the eggs with salt, pepper and dried oregano.
- Spray or brush muffin tins with oil. Fill each tin with spring onions, chicken and fried mushrooms. The tins will be around half or 2/3 full.
- Add 3 tablespoons of the whisked eggs in each tin.
- Put the muffins in the oven for about 30 minutes. Check with a fork if they're dry inside. Take out and let cool.
