Jalapeno Pepper Jack Stuffed Chicken Breast

A quick and delicious chicken breast dish that comes with a kick.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Roll or pound out the chicken breast to 1/4 inch.
  3. Spray the chicken breast with the olive oil spray and season both sides.
  4. Take a thin slice of the cheese and place in the chicken breast.
  5. Roll the chicken breast like a burrito and place a toothpick to secure it in place.
  6. Top with red pepper rings and spray one more time.
  7. Cook for 15-20 minutes.

Made this the other night and it was great! I didn't use any red peppers because I didn't have any. I did however, use a sprinkle of bread crumbs as well as some Mrs. Dash's seasoning.

Would use high quality olive oil (not the spray, usually adulterated with other oils) or coconut oil for cooking.

Delish! Had to use a different cheese as didnt have Pepper Jack in my local tesco! I made for my lunch for today, but ate half last night!! I then used the rest of the pepper and made a stuffed pepper! Cmon lunchtime!!

I've made a very similar dish for a long while now and it's really good. The family always asks me to make it more often definitely try it if you haven't! Although I agree with the others, mine usually takes a little longer than 15-20 minutes, more like 30.

I used relatively small chicken breasts and it still needed almost 40mins baking time in a covered dish. Next time I'll use thicker slices of cheese to get a bolder taste. In addition to red pepper rings I put onion rings and two cloves minced garlic on the bottom of the dish before placing the chicken on top. I then drizzled it all with a little olive oil. Will definitely make again with a few little tweaks.
